Tyropitas (YiaYia's)
Ingredients
Filling:
- 1 – 1lb. of small curd cottage cheese
- 1 – 4-8 oz. cream cheese
- 1 – 7 ½ oz. of farmers cheese
- 1lb. of Feta Cheese crumbled
- 2-3 eggs, Salt & Pepper
Phyllo:
- 2-3 sticks of butter (melted)
- 1lb. - 1 ½ lb. of Phyllo (at room temperature)
Method
Mix all Filling ingredients and refrigerate for 1 hour or overnight.
Consistency should be on the thick side.
Take 2 sheets of Phyllo dough and butter each one with a pastry brush
Cut in 4-6 strips. On each strip put 1 tsp. of the mixture. Fold into a triangular shape by folding from side to side. Butter the edge and place in Rubbermaid container. Place a piece of wax paper between each layer. You can freeze them all and use as needed.
Take frozen puffs out of the freezer, place on a greased pan and brush top of each puff with a little melted butter. BAKE at 350 for 30 minutes or until crispy and golden brown in color. YUMMY!!!
