Ingredients
- 6 to 7 cups flour
- ½ lb butter
- 1 cup oil (Mazola)
- 1 cup sugar
- 1 cup orange juice
- 3 teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- Rind of orange (optional)
For the filling:
- Dates (½ date per cookie)
- Ground nuts
- Cinnamon
- Honey
- A little hot water
Method
Beat the butter until white. Add the oil slowly, then add the sugar slowly. Then add the orange juice.
Add all the dry ingredients with a little flour, then add the rest of the six cups of flour. If you need an extra cup of flour, add it. Dough should be soft but not sticky.
For the filling: Mix the cinnamon, ground nuts, and honey with a little hot water, all together.
Place half a date and a portion of the filling mixture inside each cookie, and stuff closed.
Bake in a 350°F oven until a good color.
This is a variant of the handwritten Presvytera’s Finikia where dates are an integrated part of the preparation rather than optional, and the nut-cinnamon-honey mixture is used as a stuffing inside the cookies rather than as a dipping syrup.
