⚠ PARTIAL RECONSTRUCTION The original instruction was simply “bake like bread” without specifying temperature or time. The baking values below are reconstructed from traditional Paximadia methods.

Ingredients

  • 3 cups flour
  • 2 cups pecans or walnuts, chopped
  • 1 cup oil (Mazola)
  • 1 cup sugar
  • 3 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla

Method

Beat the eggs and sugar together. Add the oil and nuts. Add the rest of the ingredients and beat by hand. Put in the refrigerator for 2 hours or longer.

Shape the chilled dough into loaves (like bread logs) and place on a greased baking sheet.

Reconstructed: Bake at 350°F for 30–35 minutes, until firm and lightly golden.

When slightly cool, slice into cookies about ½ inch thick. Return the slices to the baking pan, cut side up.

Reconstructed: Toast in a 300°F oven for another 10–15 minutes per side, until crisp and golden. Cool completely on a rack before storing.

The original says only “bake like bread” without temperature or time. The 350°F/30–35 minutes for the first bake and 300°F/10–15 minutes per side for the toasting are reconstructed from traditional Paximadia methods.
